Chiocciole al Burrata Pasta features tender pasta shells enveloped in a rich tomato cream sauce with shallots, garlic, and melty cheese, finished with a fresh burrata ball for an extra creamy, decadent bite.

Cook the Pasta:

  1. Cook the 8 oz of chiocciole pasta in well-salted water until al dente, drain, and save 1/4 - 1/3 cup of the pasta water.

Prepare the Sauce:

  1. Melt the butter in a large skillet over medium heat.
  2. Add the chopped shallots and 1 tbsp of garlic, sauté until they soften and the garlic is fragrant (about 2-3 minutes).
  3. Stir in the tomato paste and cook for another 2 minutes.
  4. Add salt to taste along with the paprika, black pepper, red chili flakes, and chili powder.

Add the Cream:

  1. Pour in the heavy cream and stir until the sauce begins to thicken slightly.

Incorporate Pasta Water and Cheese:

  1. Add the reserved pasta water to the sauce to loosen it up, followed by the Parmesan and mozzarella cheeses. Stir until the cheese is melted and well combined.

Toss in the Pasta:

  1. Add the cooked chiocciole pasta to the sauce and toss everything together to ensure the pasta is fully coated.

Top with Burrata:

  1. Plate the pasta, and place the burrata cheese on top.
  2. Just before serving, tear into the burrata to let the creamy center mix into the pasta.

Finish with Parmesan and Chili Flakes:

  1. Sprinkle additional grated Parmesan cheese and a pinch of red chili flakes over the burrata for a final touch of flavor and spice.
