Prepare the Mascarpone Cream:

  1. Whisk the chilled heavy cream, ¾ cup granulated sugar, and vanilla in a bowl until the cream becomes thick.
  2. Add the 12 ounces mascarpone cheese in 3 additions and mix on low speed until combined.

Assembly:

  1. Mix the cocoa powder in the cooled espresso
  2. Dip the ladyfingers into the espresso one at a time, for about 2 seconds per side, and arrange them tightly in the bottom of a 9x9” pan or dish.
  3. Cover with half of the mascarpone cream and spread using an offset spatula.
  4. Repeat the process to create another layer of ladyfingers and mascarpone cream.

Finish and Chill:

  1. Dust the top with more cocoa powder.
  2. Cover the dish and refrigerate for at least 4-6 hours or preferably overnight for the best results.
